Red Velvet Sandwich Cookies

This is possibly the easiest recipe we have ever tried. It’s sweet and bright and the perfect treat for yourself, a special someone, or just friends. For the filling, we ended up using the cream cheese frosting from a can, since we were in a squeeze for time over the weekend. The outcome was still delicious, but feel free to make your own frosting from scratch. And if you prefer, you can simply make the cookies and omit the “sandwich” part (–it just might not be as fun). Here we go.

Red Velvet Sandwich Cookies
Adapted from Bakerella
Yields around 15 sandwich cookies (or 30 red velvet cookies)
Time: around 20 minutes

Ingredients:

  • 1 Box Red Velvet Cake Mix*
  • 1 Can Cream Cheese Frosting
  • 1/2 Cup Butter
  • 2 Eggs

*Any cake mix should work.

Directions:

  1. Preheat oven to 350 degrees and grease the pan.
  2. Mix ingredients until combined.
  3. Drop spoonfuls of cookie batter onto pan about two inches apart. The cookies will expand in the oven.
  4. Bake for 10-12 minutes. The cookies will be fairly delicate when they’re first taken out of the oven. Be sure to cool for 2-3 minutes before removing it from the pan and frosting it.
