Anni’s Shepherd’s Pie
Shepherd’s pie, also known as cottage pie, is a meat pie with a mashed potato crust on top. Because this dish may be made using any kind of meat and vegetables, it’s a a cheap meal that was invented in the 1800’s, hence, “cottage” pie. There are many versions of this dish, but I made mine with carrots, onions and celery. I hope you guys give it a try!
Total Cooking Time: 1 hr.
Serving Size: Two large portions
Ingredients:
1 large carrot, diced
1 stick of celery, diced
1 large potato, quartered
½ large onion, diced
2 cloves of garlic, minced
2 tsp. butter
¼ cup milk
2 cups of ground beef, lamb or pork
¼ cup shredded cheese
2 bay leaves
1 tbsp. flour
¼ cup chicken stock
Directions:
1. In a large pot, add water and boil the potato until cooked through. It’s ready if you can skewer a fork through it effortlessly.
2. In another pan, sauté the onions until translucent.
3. Add the meat and bay leaves into the pan and cook until the meat is almost completely cooked through.
4. Now add the celery and carrots and cook until tender. Season to taste with salt, pepper, cumin and cayenne pepper.
5. Add the flour to the mixture and mix well. Then, pour in the chicken stock and cook until all the moisture is cooked out.
6. By this time your potatoes should be cooked through. Drain and mash the potatoes up.
7. Mix in the milk and butter to the potatoes. Season to taste with salt and pepper.
8. Now it’s time to assemble the pie! Obtain a large class container and pack the meat mixture in.
9. Put a layer of mashed potatoes on top of the meat mixture. Garnish the top with cheese and pepper.
10. Leave uncovered and bake in a 250° oven for 15 min. and then serve!
