During winter break I had a lot of time on my hands. So naturally, I spent some of that time baking. I made some brownies, and fudge cake that was gluten free, dairy free and nut free. However, none of them tasted as good as the chocolate chips muffins I made. These muffins can be gluten free, dairy free, nut free, and soy free, and they still taste amazing! To make sure, you can see the ingredients here. I also found out the the company, King Arthur Flour, has a lot of gluten-free recipes that I will definitely try.
When I was making these muffins, I was unsure of how they would turn out. After making the bitter and disgusting fudge cake, I was determined to make something that tasted really good. So I carefully followed the instructions on the King Arthur Flour Gluten Free Muffin Mix, and made the batter, which I thought at first was too liquidy. I continued and made 24 muffins (I could have made more, but I used a lot of batter for my first batch). When I tried one it was just amazing because it tasted the same as a regular chocolate chip muffin! I gave it to my family, and they loved it too. It made me happy after the failed attempt of the fudge cake. Below is how I made it…enjoy!
Chocolate Chip Muffins
Ingredients/Things You’ll Need:
King Arthur Flour Gluten Free Muffin Mix
6 tablespoons melted butter
3 eggs
1 cup milk (almond milk, coconut milk or soy milk)
1 ½ cup dairy-free chocolate chips
Muffin liners
An egg beater/mixer
12 muffin pan
Directions:
Place the muffin liners in the 12 muffin pan.
With the egg beater or mixer, stir the melted butter. Then add the eggs, and stir.
Add the milk, and stir. I used this almond milk that is has 8 fl oz. and comes in a pack of four bottles.
Add the muffin mix, and whisk it until it is smooth. This step took some time for me because it takes a while for the batter to become very smooth without any bumps at all.
Add in the 1 ½ cup of chocolate chips and stir until the chocolate chips appear evenly spread out in the batter.
Fill in the muffin liners a bit more than halfway, and let the batter sit for 10 min. Sprinkle sugar on top of the muffins.
Bake the muffins for 20 min at 375 degrees Fahrenheit. Remove the muffins from the oven. Wait five minutes, and eat!
