Caramel Apple Pie
(From FoodWishes.com)
Ingredients (yields one 9-inch pie)
4-6 large red apples, sliced
1/2 cup sugar
1/2 cup brown sugar
6 tbsp. butter
pinch of salt
1/4 tsp. cinnamon
1/4 cup water
pie dough for two 9-inch crusts
Directions
Combine sugars, butter, salt, cinnamon and water in a saucepan.
Cook on medium heat until the butter melts and the mixture starts to boil. After it boils for about 30 seconds, take the saucepan off the stove and set it aside.
Line a pie dish with one of the unbaked pie crusts. Fill it with the apple slices. (If you want your pie to have a thicker consistency, you can toss the apples with a tablespoon of flour or cornstarch before filling in your pie dish).
Take the remaining pie crust and use a pizza slicer to cut it into 8 strips.
Place four strips of dough vertically and four horizontally across the top of the pie dish in a lattice formation. Fold the tips of the lattice strips under the edge of the bottom pie crust.
Take the caramel mixture, and drizzle it over the top of the pie and into the holes of the lattice.
Bake at 425 degrees Fahrenheit for 15 minutes, and then reduce the temperature to 350 degrees and bake for 35 to 40 minutes.
